Serves 4 – Recipe from Skipper Otto
Ingredients:
- 2 large lingcod fillets
- 3/4 cup panko bread crumbs
- 3/4 cup salted potato chips
- 2 eggs
- 1 cup flour
- salt & pepper
Tartar Sauce:
- 1/4 cup mayo
- 1/4 cup plain yogurt
- 1 tbsp capers, chopped
- 2 tbsp cornichons, chopped
- 1/2 tbsp lemon juice
- 1 tbsp dill, chopped
STEP 1
Preheat oven to 425 F.
STEP 2
Remove skin from lingcod and cut into 1 inch strips.
STEP 3
On one plate, combine flour, salt & pepper. Crush chips into small pieces and combine with flour on a second plate. Crack the eggs into a shallow bowl and whisk.
STEP 4
Ready a parchment covered baking tray for baking.
STEP 5
Dredge each piece of fish, first in the flour, then in the egg mix, and finally in the breadcrumb mix before placing on the baking tray.
STEP 6
Bake for 10 min until golden brown.
STEP 7
Mix the tartar sauce and serve with a lemon wedge.
